A Delicious Recipe for Red Wine Ice Cream

The Ingredients You’ll Need

Before you start making red wine ice cream, gather the following ingredients:

  • 2 cups of red wine (use a bold and fruity variety for the best flavor)
  • 1 cup of whole milk
  • 1 cup of heavy cream
  • 3/4 cup of granulated sugar
  • 6 egg yolks
  • 1 teaspoon of vanilla extract

Step 1: Reduce the Red Wine

Start by reducing the red wine to intensify its flavor. In a saucepan, bring the red wine to a simmer over medium heat. Let it simmer until it has reduced by half, which will concentrate its flavors. This will take approximately 15-20 minutes. Set the reduced wine aside to cool.

Step 2: Prepare the Ice Cream Base

In a separate saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat the mixture over medium heat until it reaches a gentle simmer, stirring occasionally to dissolve the sugar. Remove the mixture from the heat.

In a bowl, whisk the egg yolks until they are well-beaten. Slowly pour about 1/2 cup of the hot milk mixture into the egg yolks, whisking constantly. This will temper the eggs and prevent them from scrambling when added to the hot milk mixture.

Step 3: Combine the Ingredients

Slowly pour the tempered egg mixture back into the saucepan with the remaining milk mixture, whisking constantly. Return the saucepan to medium heat and cook, stirring constantly, until the mixture thickens and coats the back of a spoon. This will take about 5-7 minutes. Do not let the mixture boil.

Once the mixture has thickened, remove it from the heat. Stir in the reduced red wine and vanilla extract until well combined.

Step 4: Chill and Freeze

Transfer the mixture to a bowl and cover it with plastic wrap, ensuring the plastic wrap touches the surface of the mixture to prevent a skin from forming. Refrigerate the mixture for at least 4 hours, or overnight, until it is completely chilled.

Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions. This usually takes around 20-25 minutes, or until the ice cream reaches a soft-serve consistency.

Transfer the churned ice cream to an airtight container and freeze it for at least 4 hours, or until it is firm.
