French Rabbit in Mustard Sauce with White Wine is a classic dish that combines the tender and delicate flavor of rabbit with the rich and tangy taste of mustard sauce. This recipe is perfect for a special occasion or a comforting weeknight meal. The addition of white wine adds depth and complexity to the sauce, making it a truly unforgettable dish. Here is how to make this delicious French Rabbit in Mustard Sauce with White Wine.

Ingredients:

– 1 whole rabbit, cut into serving pieces

– 2 tablespoons olive oil

– 1 onion, finely chopped

– 3 cloves of garlic, minced

– 1 cup dry white wine

– 2 cups chicken broth

– 1 cup heavy cream

– 3 tablespoons Dijon mustard

– Salt and pepper to taste

French Rabbit

Step 1: Prepare the Rabbit

Start by preparing the rabbit. Rinse the rabbit pieces under cold water and pat them dry with paper towels. Season them generously with salt and pepper on both sides.

Heat the olive oil in a large skillet over medium-high heat. Add the rabbit pieces to the skillet and cook them until they are browned on all sides. Remove the rabbit from the skillet and set it aside.

Step 2: Make the Mustard Sauce

In the same skillet, add the chopped onion and minced garlic. Cook them until they are softened and fragrant, about 2-3 minutes.

Add the white wine to the skillet and bring it to a simmer. Let it simmer for 2-3 minutes to let the alcohol evaporate. Then, add the chicken broth and bring it to a boil. Reduce the heat and let the sauce simmer for about 10 minutes, or until it has reduced by half.

Stir in the heavy cream and Dijon mustard. Continue cooking the sauce for another 5 minutes, or until it has thickened slightly. Season the sauce with salt and pepper to taste.

Step 3: Cook the Rabbit in the Sauce

Add the browned rabbit pieces back to the skillet with the mustard sauce. Make sure to coat the rabbit pieces evenly with the sauce. Cover the skillet and let the rabbit simmer in the sauce for about 45 minutes to 1 hour, or until the rabbit is cooked through and tender.

During the cooking process, check on the rabbit occasionally and turn the pieces over to ensure even cooking and to prevent them from drying out.
